  • 2 Cups Crushed Tomatoes
  • 3 1/2 Cups Vegetable Broth
  • 1 (15 ounce) Can Chickpeas, Drained and Rinsed
  • 4 Cups Chopped Sweet Potatoes (about 2 Large Sweet Potatoes)
  • 1 Cup Brown Lentils, rinsed
  • 1/2 Teaspoon Salt
  • Fresh Ground Black Pepper to taste
  • 1/2 Cup Chopped Cilantro
  • 1/2 Lemon, Juiced

Instructions

  1. Heat the Oil and Cook Onions: Heat the avocado oil in a large pot or Dutch oven over medium-high heat. Add the diced onion and cook for 4-6 minutes or until the onion becomes softened and translucent.
  2. Add Aromatics: Stir in the minced garlic and grated ginger and cook for about 1 minute until fragrant, then lower the heat to medium.
  3. Toast the Spices: Add the cumin and cinnamon to the pot and stir to combine, allowing the spices to toast and release their flavors for about 1-2 minutes.
  4. Add Main Ingredients: Pour in the crushed tomatoes, vegetable broth, drained chickpeas, chopped sweet potatoes, rinsed brown lentils, and salt. Stir well to combine all ingredients.
  5. Bring to Boil and Simmer: Increase the heat to medium-high and bring the stew to a boil. Once boiling, reduce the heat to low, cover the pot, and simmer for 45-55 minutes, or until the lentils are tender and the sweet potatoes are fully cooked.
