Egg Wash

  • 1 egg whisked with 1 tablespoon of water

  • ½ cup crumbled feta cheese
  • ¼ cup grated mozzarella cheese
  • 1 green onion, chopped
  • ½ teaspoon garlic salt
  • A few grates of fresh nutmeg
  • 1 10-ounce package of frozen chopped spinach, defrosted and squeezed very dry

Puff Pastry

  • 1 puff pastry sheet, defrosted (preferably made with butter, such as Dufour brand)

Instructions

  1. Prepare egg wash: Whisk together the egg and water in a small bowl and set aside for brushing the pastry.
  2. Make the filling: In a separate bowl, combine the crumbled feta, grated mozzarella, chopped green onion, garlic salt, and freshly grated nutmeg. Mix well and set aside.
  3. Roll out the puff pastry: On a lightly floured surface, roll the defrosted puff pastry sheet to flatten the seams and create a smooth surface.
  4. Assemble the filling: Brush the entire surface of the rolled-out pastry with the egg wash. Evenly spread the cheese mixture over the pastry, then break apart the defrosted spinach and evenly distribute it on top. Leave about a one-inch border free of filling along one of the short edges.
  5. Roll the pastry: Starting at the short edge with the filling, carefully roll the pastry into a tight jellyroll shape to enclose the filling.
  6. Slice the pinwheels: Line two baking sheets with parchment paper. Slice the roll into ½ to ¾ inch thick slices and place them flat on the prepared baking sheets.
  7. Chill before baking: Place the sliced pinwheels into the refrigerator or freezer briefly while preheating the oven to 400°F (205°C). This helps them hold their shape during baking.
  8. Bake: Reduce the oven temperature to 350°F (175°C) and bake the pinwheels for 15-18 minutes or until they are golden brown and puffed.
