Shrimp and Sauce

  • 300g (10 oz) raw shrimp, peeled and deveined

  • 4 cloves garlic, minced
  • 1 small onion, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sugar
  • 1 cup chicken or vegetable broth
  • 2 stalks green onions, chopped

Instructions

  1. Soak noodles: Soak the glass noodles in warm water for about 10 minutes until they become softened. Drain thoroughly and set aside to prepare for stir-frying.
  2. Prepare aromatics: Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the minced garlic and sliced onion, stir-frying until fragrant and the onions are softened, about 2-3 minutes.
  3. Cook shrimp: Add the peeled and deveined shrimp to the skillet. Cook for 2-3 minutes, stirring occasionally until the shrimp turns pink and is opaque, indicating it’s fully cooked.
  4. Add sauces and broth: Pour in the soy sauce, oyster sauce, sugar, and chicken or vegetable broth. Stir well to combine all the flavors and bring the sauce to a gentle simmer.
  5. Toss noodles: Add the soaked glass noodles to the skillet and toss everything together. Cook for 2-3 minutes until the noodles absorb the sauce and are heated through evenly.
  6. Add green onions: Stir in the chopped green onions to add freshness and a mild sharpness to the dish.
  7. Serve: Remove the skillet from heat, garnish with fresh cilantro if desired, and serve immediately while hot for best flavor and texture.
