  • 4 cups cauliflower, chopped

  • 2 1/2 cups stock or water (enough to fill the pot halfway)
  • Salt to taste

Instructions

  1. Prepare the vegetables: Wash the cauliflower, potatoes, and carrot thoroughly. Peel the onion and potatoes, then chop all the vegetables roughly into medium-sized pieces.
  2. Combine and cook: Place the chopped vegetables into a small cooking pot. Pour in stock or water so that it reaches about halfway up the vegetables. Add a good pinch of salt to season. Bring the mixture to a boil over high heat, then reduce the heat to medium. Let it simmer for about 20 minutes until the potatoes are tender.
  3. Blend the soup: Once the vegetables are cooked and tender, remove the pot from heat. Add the Parmesan cheese and blend the soup directly in the pot using an immersion blender until it achieves a super smooth and creamy consistency.
  4. Adjust seasoning and serve: Taste the soup and adjust the salt or add more Parmesan cheese if desired. Serve hot, garnished with extra Parmesan cheese, freshly grated black pepper, croutons or toasted seeds. Optionally, add pickled jalapenos for an additional kick.

  • You can omit the carrot if you prefer a more traditional cauliflower and potato flavor.
