Ingredients

Scale

Dry Ingredients

  • 1 cup all purpose flour
  • 3/4 teaspoon baking powder
  • 3 tablespoons cocoa powder

Wet Ingredients

  • 1/2 cup salted butter
  • 2 eggs
  • 1 teaspoon vanilla extract

Sugars and Flavorings

  • 150gm dark chocolate, chopped
  • 1/2 cup light brown sugar, packed
  • 1/2 cup granulated sugar
  • 3 tablespoons orange zest

Instructions

  1. Preheat Oven: Preheat your oven to 180°C (350°F) and prepare baking sheets lined with parchment paper to prevent sticking.
  2. Infuse Sugar with Orange Zest: In a medium bowl, combine the orange zest with granulated sugar. Rub them together with your fingers until the sugar is moist and fragrant from the zest oil release.
  3. Melt Chocolate and Butter: Using a double boiler, gently melt the chopped dark chocolate and salted butter together until smooth and lump-free. Set aside to cool slightly.
  4. Whisk Eggs and Sugars: Add the light brown sugar and the two eggs to the orange-infused granulated sugar. Whisk vigorously using a hand whisk or mixer until the mixture turns frothy and light.
  5. Combine Chocolate Mixture: Slowly mix the cooled chocolate-butter mixture into the whisked egg and sugar mixture, blending thoroughly for a uniform batter.
  6. Add Dry Ingredients: Gently fold in the all-purpose flour, cocoa powder, and baking powder. Ensure the batter is well mixed and no flour streaks remain.
  7. Scoop Cookies: Using a tablespoon or 1.5 tablespoon measure, drop scoops of batter onto the prepared baking sheets, spacing them adequately.
  8. Bake: Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the edges are set and the tops develop characteristic crinkles.
  9. Cool: Remove cookies from the oven and allow them to cool completely on the baking sheet itself to firm up.
  10. Shape Cookies (Optional): If some cookies spread unevenly, press them into shape using a large cookie cutter while still warm, then allow to cool completely.
  11. Finish with Orange Zest: Sprinkle additional orange zest over the cooled cookies to enhance the citrus aroma and flavor just before serving.

Notes

  • Using a double boiler to melt chocolate prevents burning and ensures smooth texture.
  • Rubbing orange zest into the granulated sugar helps release essential oils for deeper flavor.
  • You can adjust the amount of orange zest to your preference for more or less citrus intensity.
  • Ensure cookies cool completely before storing to maintain their chewy texture.
  • For sharper orange flavor, consider using fresh organic oranges for zest.
