  • 275 grams Self-raising flour
  • 200 grams Kinder Chocolate Bars (chopped into chunks)

Instructions

  1. Make the cookie dough: Place the unsalted butter in a microwave-safe bowl and melt it for 30-40 seconds. Then, mix in both the caster sugar and light brown sugar until the ingredients are thoroughly combined.
  2. Add eggs and vanilla: Mix in the vanilla extract, whole egg, and egg yolk until well incorporated into the sugar and butter mixture.
  3. Incorporate flour: Gently fold the self-raising flour into the mixture to create a smooth cookie dough.
  4. Add Kinder chocolate chunks: Fold in most of the chopped Kinder chocolate chunks, saving a handful for decorating after baking.
  5. Chill the dough: Cover the bowl with clingfilm and refrigerate the dough for at least 4 hours or preferably overnight. This resting period enhances flavor and texture.
  6. Preheat oven and prepare trays: Set your oven to 180°C (fan) and line two large baking trays with greaseproof paper.
  7. Soften the dough: Remove the dough from the refrigerator and allow it to soften at room temperature for about 30 minutes for easier shaping.
  8. Shape the cookies: Scoop a heaped tablespoon of dough and roll it into a ball using your hands. Place each ball on the prepared baking tray, ensuring to leave 8-10cm between them to allow for spreading during baking.
  9. Bake the cookies: Bake in the preheated oven for 10-12 minutes until the edges are golden but the centers remain pale and soft.
  10. Add chocolate chunks on top: Immediately after removing the cookies from the oven, gently press a few reserved Kinder chocolate chunks onto the top of each cookie.
  11. Cool and firm up: Leave the cookies on the baking tray for 15 minutes to cool and firm up, developing the ideal texture before serving.
