Instructions

  1. Cook the Meat and Onions: In a medium saucepan over medium-high heat, add the ground beef (or sausage) and diced onions. Cook, stirring occasionally, until the meat is browned and the onions are softened. Once browned, add the chopped garlic and sauté for about 30 to 60 seconds until fragrant.
  2. Add Seasoning and Cream Cheese: Sprinkle the keto-friendly taco seasoning over the cooked meat mixture. Stir well to evenly coat. Then add the softened cream cheese and continue stirring until the cheese is fully incorporated into the meat.
  3. Add Liquids and Simmer: Pour in the undrained Rotel tomatoes and the beef broth, then add the chopped cilantro and ½ cup of freshly shredded cheese. Stir everything well and bring the mixture to a boil.
  4. Simmer the Soup: Once boiling, reduce the heat to low and let the soup simmer gently for 15 to 20 minutes, stirring occasionally to prevent sticking. Taste the soup and season with salt and pepper as needed.
