Pasta
- 12 ounces rigatoni pasta (or any pasta of choice)
Mushrooms & Seasoning
- 1 pound mushrooms, cleaned and thinly sliced (about 4mm thick)

Sauce
- 1 heaping cup hummus
- Reserved pasta water (about 1 to 2 cups)

- Boil Pasta: Bring a large pot of salted water to a boil. Add 12 ounces of pasta and cook until al dente according to package instructions. Before draining, reserve two cups of pasta water. Drain the pasta and set aside. (Start this step about 10 minutes into cooking the mushrooms to ensure timing).
- Cook Mushrooms: While the pasta cooks, heat 1 tablespoon of extra virgin olive oil in a large skillet over medium-high heat. Add the grated garlic, sliced mushrooms, 1 teaspoon salt, and ⅛ teaspoon black pepper. Sauté the mushrooms for 12 to 15 minutes, stirring occasionally, until they are browned and tender.
- Make Sauce: Reduce the heat to low. Add a heaping cup of hummus and 1 cup of the reserved pasta water to the skillet with the mushrooms. Stir continuously until the hummus melts into a creamy sauce. Taste and adjust seasoning with salt and pepper as needed.
- Add Pasta: Turn off the heat. Add the cooked pasta to the skillet and toss well to coat each piece in the creamy hummus sauce. If the sauce seems too thick, add more reserved pasta water until you achieve your desired consistency.
- Serve: Serve the pasta warm, garnished with freshly cracked black pepper, 2 tablespoons chopped parsley, and a drizzle of high-quality extra virgin olive oil. Optionally, sprinkle with 1 tablespoon grated Parmesan cheese for extra flavor.
