Ingredients

Scale

Wet Ingredients

  • 1 cup creamy peanut butter
  • 2 tablespoons honey
  • 1 large egg
  • ½ teaspoon vanilla extract

Dry Ingredients

  • ¼ cup light brown sugar, lightly packed
  • ½ cup + 2 tablespoons old-fashioned oats (or quick oats)
  • ⅛ teaspoon salt
  • 1 teaspoon baking soda

Add-Ins and Toppings

  • 1/3 cup mini chocolate chips
  • 1/3 cup mini M&M’s

Instructions

  1. Preheat the Oven: Preheat your oven to 350 degrees F to prepare for baking the cookies.
  2. Combine Wet Ingredients: In a medium bowl or stand mixer, combine creamy peanut butter, honey, and light brown sugar. Stir well without warming the peanut butter or honey.
  3. Add Dry Ingredients: Add old-fashioned oats, salt, baking soda, and vanilla extract to the peanut butter mixture and stir until well incorporated.
  4. Incorporate Egg: Lightly beat the egg in a separate bowl, then add it to the cookie dough mixture and stir thoroughly.
  5. Mix in Chocolate Chips: Stir in the mini chocolate chips evenly throughout the dough.
  6. Form Cookie Balls: Using a cookie scoop or hands, scoop about 1 tablespoon of dough per cookie. Press the dough tightly to form solid balls to prevent crumbling.
  7. Prepare for Baking: Place the cookie balls onto a cookie sheet, press them down slightly to flatten, then top each with mini M&M’s and additional mini chocolate chips if desired.
  8. Bake: Bake in the preheated oven for 7-8 minutes. Pay close attention so that the bottoms just begin to brown, even if the tops look slightly underbaked.
  9. Cool: Remove from oven and allow the cookies to cool completely on the baking sheet to firm up and finish baking from residual heat.

Notes

  • Do not warm the peanut butter or honey before mixing to maintain texture and consistency.
  • Use old-fashioned oats for a chewier texture, or quick oats for a softer cookie.
  • Press the dough tightly when forming to ensure the cookies hold together and don’t crumble.
  • Watch the cookies closely during baking as they continue to cook after being removed from the oven.
  • These cookies are free of butter, oil, and flour, making them a healthier alternative to traditional monster cookies.
