Ingredients

Scale

Wet Ingredients

  • 170 g Butter (softened)
  • 1/3 cup Granulated sugar
  • 3/4 cup Brown sugar (light or dark will work)
  • 2 tsp Vanilla extract
  • 1/2 tsp Kosher salt
  • 1 Egg
  • 1 Egg yolk

Dry Ingredients

  • 2 cup Flour (all-purpose or cake flour)
  • 1 tsp Baking soda

Add-ins

  • 2/3 cup Chocolate chips
  • 1 1/2 cup Oreos (chopped)

Instructions

  1. Preheat the oven and prepare the pan: Set your oven to 180°C (350°F) and line an 8-inch cake pan with parchment paper to prevent sticking.
  2. Cream butter and sugars: In a large mixing bowl, combine the softened butter, granulated sugar, brown sugar, vanilla extract, and kosher salt. Using an electric hand mixer, beat until the mixture is smooth, creamy, and well blended.
  3. Add eggs: Incorporate the whole egg and egg yolk into the mixture and mix again until creamy and smooth, ensuring the batter is well combined.
  4. Combine dry ingredients: Add the flour and baking soda to the wet ingredients. Mix gently until almost combined to avoid overworking the batter.
  5. Fold in chocolate chips and Oreos: Add the chocolate chips and chopped Oreos to the batter, folding them in carefully until just evenly distributed.
  6. Bake the cake: Transfer the batter into the prepared cake pan, smoothing the surface. Bake in the preheated oven for 25 to 30 minutes, until the top looks dry and is golden brown.
  7. Cool and serve: Allow the cake to cool at room temperature for at least 2 hours. Once cooled, remove from the pan and optionally decorate by piping dollops of whipped cream or your favorite frosting around the edges. Slice and enjoy!

Notes

  • Do not overmix the batter once flour and baking soda are added to keep the cake tender.
  • You can substitute regular sugar with coconut sugar for a different flavor.
  • Use fresh Oreos for the best texture; do not substitute with freezer-hardened cookies.
  • Allow the cake to cool completely before adding frosting or whipped cream to prevent melting.
  • Store leftovers covered at room temperature for up to 3 days or refrigerated for up to a week.
