Ingredients

Scale

Sausage Mixture

  • 1 lb mild ground sausage
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1 tsp pepper
  • 2 tsp Italian seasoning
  • 1 tsp garlic powder

Sauce & Gnocchi

  • 1 (15 oz) can garlic and olive oil petite diced tomatoes (any flavor will do)
  • 3/4 cup heavy cream
  • 1 (16 oz) package gnocchi
  • 23 cups spinach

Cheese & Garnish

  • 1 1/2 cups shredded mozzarella cheese
  • Parsley for garnish (optional)

Instructions

  1. Cook Sausage Mixture: In a skillet over medium-high heat, add the mild ground sausage, diced onion, minced garlic, salt, pepper, Italian seasoning, and garlic powder. Sauté until the sausage is browned and the onions are translucent, stirring occasionally to break up the sausage evenly.
  2. Add Sauce and Gnocchi: Stir in the canned diced tomatoes with garlic and olive oil, heavy cream, gnocchi, and spinach. Cook the mixture over medium heat for about 8-10 minutes, or until the gnocchi is tender, the spinach has wilted, and some of the cream has reduced, stirring occasionally to combine the flavors well.
  3. Incorporate Cheese: Add the shredded mozzarella cheese into the skillet and stir until the cheese is completely melted and the sauce is creamy and smooth.
  4. Garnish and Serve: Optionally top with additional mozzarella cheese and a sprinkle of fresh parsley. Serve hot and enjoy this creamy, flavorful one-pot meal.

Notes

  • For a spicier version, use hot Italian sausage instead of mild.
  • If you prefer a lighter dish, substitute heavy cream with half-and-half or a creamy non-dairy alternative.
  • You can use fresh or frozen spinach; just add frozen spinach directly without thawing.
  • Make sure to stir frequently when cooking gnocchi to prevent sticking.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated gently on the stovetop.
