Ingredients

Scale

Salad

  • 1 cup (140 g) frozen shelled edamame
  • 1 package (6.5 oz or 180 g) snap peas, thinly sliced on a bias
  • 1/4 cup packed cilantro, finely chopped
  • 4 scallions, thinly sliced on a bias
  • 1 tbsp (10 g) lemon juice
  • Kosher salt, to taste

Dressing

  • 2 tsp (3 g) toasted sesame seeds
  • 2 tsp (10 g) honey
  • 2 tsp (11 g) finely grated ginger
  • 1 tsp (6 g) chili crisp (adjust to preferred spice level)
  • 2 tbsp (16 g) sesame oil

Instructions

  1. Blanch the edamame: Bring a pot of water to a boil and add a generous pinch of kosher salt. Add the frozen shelled edamame and reduce heat to medium. Cook for about 3 minutes or until some edamame begin to float to the surface, indicating they are cooked through. Drain and immediately rinse under cold water to stop the cooking process.
  2. Prep the peas and greens: Wash the snap peas and pat them dry. Thinly slice them on a bias to enhance their texture and flavor. In a serving bowl, combine the sliced snap peas, blanched edamame, chopped cilantro, and scallions. Toss with lemon juice and set aside to allow flavors to meld.
  3. Make the dressing: In a heat-proof bowl or jar, add the toasted sesame seeds, honey, finely grated ginger, and chili crisp. Heat the sesame oil in a pan over high heat until it shimmers and looks watery, indicating it is hot but not burnt. Carefully pour the hot oil over the aromatic ingredients to flash cook the ginger and release their fragrance. Stir the mixture thoroughly to combine all flavors.
  4. Finish and serve: Pour the dressing over the salad mixture. Add a generous pinch of kosher salt and toss the salad to ensure even coating. Adjust seasoning with more salt if needed. Serve immediately for optimal freshness and crunch. This salad pairs wonderfully with sticky teriyaki or chili crisp salmon, short-grain rice, or topped with crispy rice for extra texture.

Notes

  • Adjust the amount of chili crisp based on your preferred spice level.
  • Use freshly grated ginger for the best flavor impact.
  • Flash cooking the dressing ingredients with hot sesame oil amplifies the aroma and flavor.
  • Serve immediately to enjoy the salad’s crisp texture.
  • Pair with rice or protein dishes for a complete meal.
