Dough
- 1 cup Milk (warmed to 110°F)
- 2 1/4 tsp Active dry yeast (or one whole packet)
- 2 Large eggs (room temperature)
- 4 1/2 cups All-purpose flour
- 1 tsp Salt
- 1/4 cup White granulated sugar
- 10 TBSP Unsalted butter (room temperature and cubed)
Cinnamon Filling
- 1/2 cup Unsalted butter (room temperature)
- 3/4 cup Brown sugar (packed, light or dark)
- 1 TBSP Ground cinnamon
- 1/3 cup Salted caramel
Salted Caramel Sauce
- 1 cup White granulated sugar
- 4 TBSP Unsalted butter (room temperature and cubed)
- 1/2 cup Heavy cream
- 1 tsp Salt
- 1/2 tsp Pure vanilla extract
Salted Caramel Icing
- 1 1/2 cups Powdered sugar (sifted)
- 2 TBSP Salted caramel
- 1/3 cup Heavy cream
- 1 tsp Pure vanilla extract
Additional
- Caramel (to top the rolls with)
- Make Salted Caramel: Heat the sugar in a medium saucepan over medium heat, stirring with a whisk until all sugar crystals dissolve and the sugar melts completely. Allow the caramel to turn amber in color, which takes less than 30 seconds. Remove from heat and whisk in half of the cubed butter, then add the remaining butter and whisk until fully incorporated.
- Add Cream and Flavorings: Warm the heavy cream in the microwave until warm, then gradually add it to the caramel, whisking continuously. Add vanilla extract and salt, then pour the caramel into a separate container and let it cool completely before using.
- Prepare Dough: Warm milk to 110°F and pour yeast over it. Let it sit 10 minutes until frothy. In a large bowl, combine flour, salt, and sugar, then cut in cubed butter with a pastry cutter or hands until pea-sized pieces form. Add eggs and the milk-yeast mixture.
- Knead Dough: Using a stand mixer with a dough hook, mix at low speed until dough forms, then knead on medium speed for 5 minutes. The dough should be slightly tacky but not overly sticky.
- First Rise: Preheat oven to 200°F. Spray a large bowl with non-stick spray. Place dough in the bowl, cover with kitchen towel, put in oven with door cracked open, then turn oven off. Let dough rise for 1 hour.
- Make Cinnamon Filling: In a small bowl, blend softened butter, brown sugar, and cinnamon with a hand mixer until smooth.
- Shape Rolls: Punch down dough and roll on lightly floured surface into a large 1/4 inch thick rectangle. Spread cinnamon filling evenly over dough, then drizzle with cooled salted caramel.
- Cut Rolls: Roll dough from the short side into a log. Trim uneven edges. Cut log into 12 equal slices using dental floss or a serrated knife with gentle sawing motions.
- Second Rise: Spray a 9×13 inch baking pan with baking spray. Place rolls in the pan, cover with kitchen towel, and let rise for 20 minutes.
- Bake: Preheat oven to 375°F. Bake rolls for 22-28 minutes until tops are lightly golden.
- Make Icing: While rolls bake, mix sifted powdered sugar, salted caramel, heavy cream, and vanilla extract until pourable.
- Finish and Serve: Immediately after baking, pour icing over the hot rolls so it melts into them. Use all the icing and drizzle extra caramel on top to finish.
Notes
- Making the caramel ahead of time is recommended to allow it to cool and thicken for easier handling.
- If mixing dough by hand, use the same technique to combine ingredients and knead for about 8-10 minutes until dough is smooth and elastic.
- When cutting the rolls, dental floss works well to make clean cuts without squishing the dough.
- Keeping the oven door cracked open during the first rise creates a warm, draft-free environment ideal for yeast fermentation.
- You can substitute salted caramel with store-bought caramel sauce if short on time, but homemade adds extra flavor depth.
