Ingredients

Scale

Dry Ingredients

  • 1 cup flour (120g) – whole grain spelt, white, all-purpose gluten-free, or oat flour can be used
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/4 tsp ground cinnamon (optional) or pinch of ground cardamom

Wet Ingredients

  • 1/4 cup water (60g)
  • 1 tsp white vinegar or apple cider vinegar (5g)
  • 1/4 tsp pure vanilla extract (1g)
  • 1/3 cup pure maple syrup or honey (80g)
  • 3 tbsp oil (36g) – can substitute with applesauce or banana for fat-free option
  • 1/2 cup blueberries (60g)

Instructions

  1. Prepare the pan and oven: Grease a donut pan well to prevent sticking. Preheat your oven to 350° Fahrenheit (176° Celsius).
  2. Mix dry ingredients: In a large bowl, combine the flour, baking powder, salt, and optional spices like cinnamon or cardamom. Stir thoroughly to distribute all ingredients evenly.
  3. Add wet ingredients: Stir in water, maple syrup (or honey), vinegar, oil, and vanilla extract into the dry mixture. Mix just until everything is evenly combined, avoiding overmixing to keep donuts tender.
  4. Incorporate blueberries: Gently fold the blueberries into the batter carefully to prevent bursting. Alternatively, you can press blueberries into each donut mold just before baking for a more decorative touch.
  5. Fill donut molds: Spoon the batter into the prepared donut pan, filling each mold about two-thirds of the way full to allow room for rising during baking.
  6. Bake: Place the pan on the center rack of the preheated oven and bake for 10 minutes, or until the donuts are light, fluffy, and fully cooked through.
  7. Cool and remove: Let the donuts cool slightly before running a knife around the edges and carefully removing them from the pan onto a serving plate.
  8. Serve and enjoy: Frost as desired or enjoy them plain. Store leftover donuts loosely covered at room temperature overnight, refrigerated up to five days, or freeze for up to three months.
