For the Chicken Skewers

  • wooden skewers (soaked in water for 30 minutes)
  • 2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper

For the Bang Bang Sauce

  • 1 ¼ cups (290 g) mayonnaise
  • ⅔ cup Thai sweet chili sauce
  • 2 teaspoons Sriracha (or more to taste)
  • 2 tablespoons honey

Instructions

  1. Toss chicken with seasonings. In a large bowl, combine the cubed chicken breasts, extra virgin olive oil, paprika, garlic powder, kosher salt, and black pepper. Toss thoroughly to evenly coat all the chicken pieces with the seasoning mixture.
  2. Thread chicken onto skewers. Take the soaked wooden skewers and carefully thread 4-5 pieces of the seasoned chicken cubes onto each skewer, making sure the pieces are evenly spaced but snug enough to cook uniformly.
  3. Make bang bang sauce. In a small bowl, whisk together the mayonnaise, Thai sweet chili sauce, Sriracha, and honey until smooth and well blended. This will yield about 1 ¾ cups of sauce.
  4. Brush sauce over chicken. Divide the sauce in half. Use one half to generously brush over all sides of the chicken skewers to coat them before cooking. Reserve the other half for serving.
  5. Prepare the air fryer. Arrange the chicken skewers in a single layer in the basket of your air fryer. Depending on your air fryer size, you may need to cook in batches to avoid overcrowding, which ensures even cooking.
  6. Air fry the chicken. Cook the skewers at 400°F (204°C) for 11 to 12 minutes, flipping the skewers halfway through the cook time to promote even browning. The chicken is done when it reaches an internal temperature of 165°F (74°C).
  7. Serve with reserved sauce. Transfer the cooked chicken skewers to a serving platter, then drizzle or brush them with the reserved bang bang sauce for extra flavor. Serve immediately while hot and juicy.
