Ingredients

Scale

For the Mushroom Topping

  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 16 ounces cremini mushrooms, thinly sliced
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • Kosher salt and freshly ground black pepper, to taste

For the Pizza

  • 1/4 cup yellow cornmeal
  • 1 pound pizza dough (homemade or store-bought)
  • 8 1-ounce slices Wisconsin fresh mozzarella cheese
  • 1 cup Wisconsin ricotta cheese

Instructions

  1. Preheat the Oven: Preheat your oven to 450°F (232°C). Lightly coat a baking sheet or pizza pan with olive oil to prevent sticking.
  2. Sauté the Garlic: In a large skillet over medium heat, melt the unsalted butter. Add the minced garlic and cook, stirring frequently, until fragrant, about 1 to 2 minutes.
  3. Cook the Mushrooms: Add the thinly sliced cremini mushrooms to the skillet along with the dried thyme and dried oregano. Cook, stirring occasionally, until the mushrooms are tender and browned, about 5 to 6 minutes. Season with kosher salt and freshly ground black pepper to taste.
  4. Prepare the Pizza Dough: Sprinkle yellow cornmeal on a clean surface. Roll out the pizza dough into a 12-inch diameter round, ensuring an even thickness. Transfer the rolled dough onto the prepared baking sheet or pizza pan.
  5. Add Toppings: Evenly arrange the 8 slices of fresh mozzarella on top of the dough. Add dollops of the ricotta cheese over the mozzarella, then spread the sautéed mushroom mixture on top.
  6. Bake the Pizza: Place the pizza in the preheated oven and bake for 15 to 20 minutes, or until the crust turns golden brown and the cheeses have melted completely.
  7. Serve: Remove the pizza from the oven and serve immediately while hot and fresh.

Notes

  • Use fresh herbs if available for an enhanced flavor.
  • You can substitute cremini mushrooms with white button mushrooms or shiitake if preferred.
  • If you like a crispier crust, you can pre-bake the pizza dough for 5 minutes before adding toppings.
  • For a vegetarian version, ensure the pizza dough and cheeses are free of animal-derived enzymes.
  • Adjust seasoning as needed depending on your taste preference.
