White Christmas Slice is a no-bake, deliciously sweet treat combining melted white chocolate with crunchy Rice Bubbles, dried cranberries, sultanas, toasted slivered almonds, and desiccated coconut. This easy-to-make slice sets in the fridge and is perfect for festive occasions or as a sweet snack.

  • 500 g white chocolate
  • 1 1/2 cups (45 g) Rice Bubbles (or any puffed rice)
  • 160 g dried cranberries (craisins)
  • 140 g sultanas
  • 120 g slivered almonds (toasted)
  • 1 cup (90 g) desiccated coconut

Instructions

  1. Prepare the tin: Grease and line a 20cm x 28cm rectangular slice tin with baking paper and set aside to ensure easy removal later.
  2. Melt the white chocolate (Conventional Method): Place the white chocolate in a large microwave-safe bowl and melt it on 50% power for 3-4 minutes, stirring every 30 seconds until completely melted. Alternatively, if using a Thermomix, melt the white chocolate for 4-5 minutes at 60 degrees Celsius at speed 2.
  3. Combine ingredients: Add the Rice Bubbles, dried cranberries, sultanas, toasted slivered almonds, and desiccated coconut to the melted white chocolate. Stir thoroughly to fully combine the mixture. For Thermomix users, mix on Reverse, Speed 2 using the spatula to assist.
  4. Press into tin: Spoon the mixture into the prepared slice tin and press it down firmly to create an even, compact layer.
  5. Chill to set: Place the slice in the fridge for 3-4 hours, preferably overnight, to allow the mixture to set and harden properly.
  6. Slice and store: Once set, cut into 16 slices. Store the slices in an airtight container in the fridge for up to one week to keep them fresh.

Notes

  • Use good quality white chocolate for best flavor and texture.
  • To toast almonds, spread them on a baking tray and bake at 350°F (175°C) for 5-7 minutes or until golden and fragrant.
  • You can substitute Rice Bubbles with any other puffed rice or cereal for variation.
  • For an even sweeter slice, add extra dried fruit or white chocolate chips.
  • This recipe requires refrigeration to set the chocolate and bind the ingredients together properly.
