Instructions

  1. Prepare the dates: Line a medium-sized baking sheet with parchment paper. Slit each Medjool date to remove the pits if necessary, then spread the dates evenly onto the parchment paper in a rectangular shape, such as a 4×6 pattern.
  2. Add peanut butter and peanuts: Pour and spread the creamy peanut butter evenly over the arranged dates, ensuring full coverage. Then sprinkle the dry roasted peanuts evenly over the peanut butter layer to add crunch.
  3. Melt the chocolate: Place the chocolate chips and coconut oil (if using) into a microwave-safe bowl. Microwave in 30-second bursts, stirring in between, until the chocolate is mostly melted. Continue stirring until the chocolate is smooth and fully melted.
