  • 3 ripe bananas (about 350400 g)

Cinnamon Sugar Swirl

  • 100 g sugar
  • 2 tbsp cinnamon

Crumble

  • 60 g flour
  • 20 g sugar
  • 20 g brown sugar
  • 45 g vegan margarine (cold)
  • 1 tsp cinnamon

Vanilla Glaze

  • 120 g powdered sugar
  • 45 tbsp plant milk (or more if needed)
  • ½ tsp vanilla extract

Instructions

  1. Prepare the cinnamon-sugar swirl: Mix the 100 g sugar and 2 tbsp cinnamon together in a small bowl and set aside for later layering.
  2. Make the crumble: Quickly knead 60 g flour, 20 g sugar, 20 g brown sugar, 45 g cold vegan margarine, and 1 tsp cinnamon together into a crumbly dough, then set aside in the fridge to chill slightly.
  3. Preheat the oven: Set your oven to 180°C (top and bottom heat) and lightly grease a loaf pan to prevent sticking.
  4. Make the batter: In a large bowl, whisk together 250 g flour, 2 tsp baking powder, and ½ tsp salt. In another bowl, combine 60 ml oil, 75 ml plant milk, 50 g sugar, 1 tbsp apple cider vinegar, and 1 tsp vanilla extract. Pour the wet ingredients into the dry ingredients and stir gently. Mash 3 ripe bananas with a fork until smooth and fold into the mixture carefully to avoid overmixing; the batter should be combined but still light.
  5. Layer the swirl: Pour about half of the batter into the prepared loaf pan. Generously sprinkle the cinnamon-sugar mixture evenly over the batter. Add the remaining batter on top. Use a fork to swirl through the batter with a spiral motion to create the cinnamon swirl effect. Finally, evenly sprinkle the prepared crumble over the top of the loaf.
  6. Bake: Place the loaf pan in the oven and bake for 50 to 70 minutes, or until a toothpick inserted into the center comes out clean. Remove from oven and allow the bread to cool completely in the pan before glazing.
  7. Add the glaze: Using a hand mixer, whisk together 120 g powdered sugar, 4 to 5 tbsp plant milk, and ½ tsp vanilla extract until smooth and pourable. Drizzle this vanilla glaze evenly over the cooled banana bread before serving.
