Ingredients

Scale

Cookie Dough

  • 1 1/2 cups butter, softened to room temperature
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 3/4 cups all-purpose flour
  • 1/4 tsp salt

Caramel Topping

  • 11 oz caramel bits
  • 1 TBSP heavy cream

Chocolate Topping

  • 2 cups milk chocolate chips
  • 2 tsp coconut oil or vegetable shortening

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and prepare a baking sheet by lining it with parchment paper or a silicone baking mat to prevent sticking.
  2. Mix Butter and Sugar: In a stand mixer fitted with the paddle attachment, combine the softened butter and powdered sugar. Mix on low speed until the mixture is smooth and well combined.
  3. Add Vanilla: Incorporate the vanilla extract into the butter and sugar mixture, mixing until evenly distributed.
  4. Add Dry Ingredients: While the mixer is running at low speed, gradually add the all-purpose flour and salt, mixing just until a soft dough forms, taking care not to overmix.
  5. Roll Out Dough: Place the dough between two sheets of parchment or waxed paper and roll it out evenly to about 1/4 inch thickness.
  6. Cut Cookies: Use a 2.5-inch round cookie cutter to cut rounds from the dough. Arrange the rounds about 1 inch apart on the prepared baking sheet.
  7. Bake Cookies: Bake in the preheated oven for 10-12 minutes, or until the edges just begin to turn golden brown. Let the cookies cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
  8. Melt Caramel: In a microwave-safe bowl, combine caramel bits and heavy cream. Microwave for 60 seconds, stir, and continue microwaving in 15-second increments, stirring until smooth and melted.
  9. Apply Caramel: Spoon and spread the melted caramel evenly over the cooled cookies, covering the surface.
  10. Cool Caramel: Allow the caramel to cool completely and set firmly before proceeding.
  11. Melt Chocolate: In another microwave-safe bowl, combine milk chocolate chips and coconut oil or vegetable shortening. Microwave for 30 seconds, stir, then microwave in additional 30-second increments if necessary until fully melted and smooth.
  12. Apply Chocolate: Spoon and spread the melted chocolate over the set caramel layer on each cookie.
  13. Set Chocolate: Let the chocolate topping cool and harden completely. To speed up this process, you may refrigerate the cookies.
  14. Serve: Once the chocolate is set, your Twix Cookies are ready to be enjoyed.

  • Rolling the dough between sheets of parchment paper makes for easy cleanup and prevents sticking.
  • Microwave melting times can vary; stir frequently to avoid burning the caramel and chocolate.
  • Refrigerate the cookies to speed up the chocolate setting process if desired.
  • Store cookies in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness.
