Turkish Manti with Garlicky Yogurt & Spiced Butter Sauce

Delicate beef-filled dumplings served with cool garlicky yogurt and drizzled with a sizzling paprika butter sauce — Turkish manti are a bold and comforting fusion of textures and flavor.

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 large egg
  • 1/3 cup water (plus more if needed)
  • 1/2 lb ground beef or lamb
  • 1 small onion, finely grated
  • Salt and black pepper to taste
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground sumac (optional)
  • 1 cup plain Greek yogurt
  • 1 clove garlic, minced
  • Salt to taste
  • 3 tablespoons butter
  • 1 teaspoon paprika
  • 1/2 teaspoon red pepper flakes
  • 1 teaspoon dried mint

Instructions

  1. To make the dough, mix flour and salt in a bowl. Add egg and water, kneading until a firm dough forms. Cover and rest for 30 minutes.
  2. Combine all filling ingredients in a bowl and mix well.
  3. Roll dough into a thin sheet and cut into 2-inch squares. Place a small amount of filling in the center of each. Fold and pinch into a dumpling shape.
  4. Boil salted water in a pot. Cook dumplings in batches for 6–8 minutes until tender. Drain and set aside.
  5. In a bowl, mix yogurt, garlic, and salt. Spread on serving plate.
  6. In a small saucepan, melt butter. Stir in paprika, red pepper flakes, and mint. Simmer briefly.
  7. Arrange hot dumplings over yogurt sauce. Drizzle with spiced butter. Serve immediately.

Notes

  • Dough can be made ahead and refrigerated for up to 1 day.
  • Use a pasta machine for even dough thickness.
  • Freeze shaped manti on a tray, then store in bags for future use.
  • Adjust spice levels in butter to taste.
