Ingredients

Scale

Soup Ingredients

  • 1 tablespoon olive oil
  • 25 grams butter
  • 1 onion, chopped
  • ½ sweet potato, peeled and chopped
  • 3 cloves garlic, minced
  • ½ teaspoon ground cinnamon
  • 2 tablespoons fresh basil, torn
  • 2 (400g) cans chopped tomatoes
  • 500ml chicken stock
  • ½ teaspoon sugar
  • 50ml single cream

Dumpling Ingredients

  • 125g dried breadcrumbs
  • ½ teaspoon baking powder
  • 75g mature cheddar, grated
  • 1 teaspoon mustard powder
  • 1 teaspoon dried oregano
  • 1 egg
  • 50g cream cheese

Instructions

  1. Heat the Base: Heat olive oil and butter in a large pot over low heat. Add chopped onion and sweet potato; cook until soft, about 5 to 10 minutes.
  2. Sauté Aromatics: Stir in minced garlic and ground cinnamon and cook until fragrant, about 1 minute. Then add fresh basil, chopped tomatoes, and chicken stock.
  3. Simmer Soup: Bring the mixture to a boil, then reduce heat and let simmer gently for 20 minutes to develop flavors and soften ingredients.
  4. Prepare Dumplings: In a mixing bowl, combine dried breadcrumbs, baking powder, grated cheddar, mustard powder, dried oregano, egg, and cream cheese; mix until stiff dough forms. Shape into about 8 small dumpling balls.
  5. Blend Soup: Using a blender or immersion blender, blend the soup until smooth. Adjust seasoning if needed, then stir in the single cream for richness.
  6. Cook Dumplings: Carefully drop the dumplings into the simmering soup and cook for an additional 10 minutes without stirring so they hold their shape and cook through.

Notes

  • For a vegetarian version, substitute chicken stock with vegetable stock.
  • Be gentle when adding dumplings to keep their shape intact.
  • Adjust the seasoning after blending for best flavor balance.
  • The soup can be made a day ahead; add dumplings fresh before serving.
  • Use fresh herbs for best aroma and taste.
