  • 1 1/4 cups Medjool dates, packed and pitted
  • 2 cups Let’s Do Organic Unsweetened Toasted Coconut Flakes (plus extra for topping)
  • 1/4 cup almond butter (natural)
  • 1/2 cup vegan dark chocolate, chopped
  • 1 tsp coconut oil

Instructions

  1. Process Dates: Place the pitted Medjool dates into a food processor and blend until they start to form a ball. Turn off the processor and break the date ball into smaller pieces with your hands to help the next blending step.
  2. Add and Blend Coconut and Almond Butter: Add the toasted coconut flakes and almond butter to the food processor. Blend again just until combined, being careful not to over blend to avoid releasing excess oils from the almond butter.
  3. Press Mixture into Pan: Prepare a 6×6 inch pan lined with parchment paper. Press the date and coconut mixture evenly into the bottom of the pan. Cover and chill in the refrigerator for 1 hour to set.
  4. Melt Chocolate and Coconut Oil: In a microwave-safe bowl, combine the chopped vegan dark chocolate and coconut oil. Microwave in 15-second increments, stirring between each, until the mixture is smooth and melted.
  5. Cut and Dip Bars: Remove the chilled mixture from the pan and cut into 6 bars. Dip the bottom half of each bar into the melted chocolate and place on a parchment-lined tray.
  6. Decorate and Chill: Drizzle the remaining chocolate over the tops of the bars and sprinkle with extra toasted coconut flakes. Chill until the chocolate is solid before serving.
  7. Storage: Store the bars in an airtight container in the refrigerator for up to one week.

Notes

  • Be careful not to over blend the almond butter with the dates to prevent the mixture from becoming oily.
  • Use parchment paper in the pan to easily remove the bars after chilling.
  • Feel free to use other nut butters if almond butter is not available, but keep in mind this may slightly alter flavor and texture.
