  • 2 garlic cloves, minced
  • 6 oz roasted peppers, chopped

  • 3/4 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Chopped parsley, for garnish

Instructions

  1. Cook the Fish: Melt 2 tablespoons of butter in a large non-stick skillet over medium heat. Fry the tilapia fillets for 3-4 minutes on each side until they are cooked through and opaque. Season with salt and pepper. Remove the fish from the skillet and set aside.
  2. Sauté Onion: In the same skillet, add the remaining 1 tablespoon of butter. Add the diced onion and sauté for about 5 minutes until the onion becomes soft and translucent.
  3. Add Peppers and Garlic: Stir in the minced garlic, chopped roasted peppers, and pureed roasted peppers. Cook the mixture for another 5 minutes, allowing the flavors to meld together.
  4. Create the Sauce: Pour in the heavy cream and add the grated Parmesan cheese. Turn off the heat and stir the sauce well. Taste and adjust with additional salt if necessary.
  5. Combine Fish and Sauce: Return the cooked tilapia fillets to the skillet, nestling them into the roasted pepper sauce. Spoon the sauce over the fish to coat evenly.
  6. Garnish and Serve: Sprinkle chopped parsley and additional grated Parmesan cheese over the top before serving. Serve hot and enjoy!
