Ingredients

Scale

Chicken and Seasoning

  • 1 lb (450g) boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • Salt and pepper to taste
  • 1 tbsp vegetable oil

Teriyaki Sauce

  • 2 tbsp soy sauce
  • 2 tbsp honey or brown sugar
  • 2 tbsp rice vinegar (or apple cider vinegar)
  • 1/4 cup water
  • 1 tsp fresh ginger, minced
  • 1 tsp garlic, minced

Thickening Slurry

  • 1 tbsp cornstarch, mixed with 2 tbsp water

Garnish

  • Sesame seeds
  • Chopped green onions

Instructions

  1. Prepare the teriyaki sauce: In a small bowl, combine soy sauce, honey or brown sugar, rice vinegar, water, minced ginger, and minced garlic. Stir well until the honey is fully dissolved and the ingredients are thoroughly mixed.
  2. Cook the chicken: Heat the vegetable oil in a large skillet over medium-high heat. Season the bite-sized chicken pieces lightly with salt and pepper. Add the chicken to the skillet and cook, turning occasionally, until golden brown on both sides and cooked through, approximately 5 to 7 minutes.
  3. Add the sauce to chicken: Pour the prepared teriyaki sauce over the cooked chicken in the skillet. Stir to evenly coat all the chicken pieces with the sauce.
  4. Thicken the sauce: Lower the heat to low. Prepare the cornstarch slurry by mixing 1 tablespoon cornstarch with 2 tablespoons water in a small bowl. Add this slurry to the skillet and stir constantly until the sauce thickens and coats the chicken nicely, about 2 to 3 minutes.
  5. Finish and serve: Remove the skillet from heat. Sprinkle sesame seeds and chopped green onions on top for garnish. Serve the teriyaki chicken hot over rice or noodles.

Notes

  • Chicken thighs provide more flavor and juiciness compared to chicken breasts but both work well.
  • Adjust the sweetness by using honey or brown sugar to your preference.
  • For a gluten-free option, use gluten-free soy sauce or tamari.
  • Serve with steamed rice, noodles, or vegetables for a complete meal.
  • Leftovers can be refrigerated in an airtight container for up to 3 days.
