Sunny-Side Eggs with Crispy Potato & Pepper Hash

A hearty, savory breakfast plate featuring perfectly cooked sunny-side-up eggs seasoned with everything bagel spice, paired with golden-brown potatoes sautéed with green bell peppers and onions. A simple, satisfying way to kick off your morning.

  • 2 large eggs
  • 2 medium Yukon gold potatoes, peeled and diced
  • 1 green bell pepper, diced
  • 1/4 small yellow onion, diced
  • 1 tbsp olive oil
  • 1 tbsp butter
  • Salt and pepper, to taste
  • 1/2 tsp smoked paprika
  • Everything bagel seasoning (optional)

Instructions

  1. Heat olive oil in a skillet over medium-high heat.
  2. Add diced potatoes and cook for 6–8 minutes, stirring occasionally, until golden and crispy.
  3. Add bell pepper and onion to the pan. Sprinkle with salt, pepper, and paprika. Sauté for another 4–5 minutes until vegetables are soft and slightly charred.
  4. In a separate nonstick skillet, melt butter over medium heat. Crack in the eggs gently and cook uncovered until whites are set and yolks are still runny (about 3–4 minutes).
  5. Season eggs with salt and a sprinkle of everything bagel seasoning, if desired.
  6. Plate the eggs with the potato pepper hash and serve hot.

Notes

  • Use a lid briefly to help set egg whites without overcooking the yolks if desired.
  • Add red pepper flakes for extra heat.
  • Try sweet potatoes instead of Yukon gold for variation.
  • Double the recipe for a filling weekend brunch.
