Strawberry Pancake Nutella Stacks

Mini fluffy pancake stacks layered with fresh strawberries and creamy Nutella – a delightful no-fork-needed treat perfect for breakfast or party platters.

  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1/2 cup Nutella (or any chocolate-hazelnut spread)
  • 1 pint fresh strawberries, hulled and sliced
  • Toothpicks or mini skewers for assembly

Instructions

  1. In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  2. In a separate bowl, mix buttermilk, egg, melted butter, and vanilla until well combined.
  3. Pour the wet mixture into the dry and stir just until combined – do not overmix.
  4. Heat a nonstick skillet or griddle over medium heat. Lightly grease with butter or cooking spray.
  5. Pour 1 tablespoon of batter per pancake to make mini pancakes. Cook until bubbles form on the surface and the edges are set (about 1-2 minutes), then flip and cook 1 more minute.
  6. Let the mini pancakes cool slightly. Spread a small amount of Nutella on one side of a pancake.
  7. Layer: pancake, Nutella, strawberry slice – repeat 2-3 times, ending with a strawberry slice on top.
  8. Secure with a toothpick or mini skewer.
  9. Serve immediately or refrigerate for up to 1 day.

Notes

  • Do not overmix the pancake batter to keep them fluffy.
  • Use ripe, firm strawberries for best texture and flavor.
  • These stacks can be prepared a few hours ahead and refrigerated.
