- 4 large flour tortillas or flatbreads
- 2 tbsp olive oil
- 3 cups fresh spinach
- 1 garlic clove, minced
- 1 cup crumbled feta cheese
- 1/2 cup sun-dried tomatoes (in oil), drained and chopped
- Salt and black pepper, to taste
- Optional: hummus or Greek yogurt spread for extra creaminess
- Heat olive oil in a skillet over medium heat. Add garlic and sauté for 30 seconds.
- Add spinach and cook until wilted, about 2–3 minutes. Season with a pinch of salt and pepper. Remove from heat and let cool slightly.
- Lay out tortillas and spread a thin layer of hummus or Greek yogurt if using.
- Evenly distribute the sautéed spinach across each tortilla.
- Sprinkle with crumbled feta and chopped sun-dried tomatoes.
- Roll each tortilla tightly.
- Toast the wraps in a dry skillet over medium heat for 1–2 minutes per side until golden and slightly crisp.
- Slice in half and serve warm or chilled.
Notes
- Use whole wheat wraps for a healthier option.
- Add grilled chicken or chickpeas for extra protein.
- Wraps can be made ahead and stored in the fridge for up to 2 days.
