Spinach, Feta, and Sun-Dried Tomato Wraps

A Mediterranean-inspired wrap filled with sautéed spinach, tangy sun-dried tomatoes, and creamy feta cheese, rolled in soft flatbread. Perfect for lunch, a light dinner, or meals on the go.

Ingredients

  • 4 large flour tortillas or flatbreads
  • 2 tbsp olive oil
  • 3 cups fresh spinach
  • 1 garlic clove, minced
  • 1 cup crumbled feta cheese
  • 1/2 cup sun-dried tomatoes (in oil), drained and chopped
  • Salt and black pepper, to taste
  • Optional: hummus or Greek yogurt spread for extra creaminess

Instructions

  1. Heat olive oil in a skillet over medium heat. Add garlic and sauté for 30 seconds.
  2. Add spinach and cook until wilted, about 2–3 minutes. Season with a pinch of salt and pepper. Remove from heat and let cool slightly.
  3. Lay out tortillas and spread a thin layer of hummus or Greek yogurt if using.
  4. Evenly distribute the sautéed spinach across each tortilla.
  5. Sprinkle with crumbled feta and chopped sun-dried tomatoes.
  6. Roll each tortilla tightly.
  7. Toast the wraps in a dry skillet over medium heat for 1–2 minutes per side until golden and slightly crisp.
  8. Slice in half and serve warm or chilled.

Notes

  • Use whole wheat wraps for a healthier option.
  • Add grilled chicken or chickpeas for extra protein.
  • Wraps can be made ahead and stored in the fridge for up to 2 days.
