Spinach and Feta Stuffed Chicken Breast

Juicy roasted chicken breasts stuffed with creamy feta, sautéed spinach, and crispy bacon—flavor-packed and beautifully sliced for an elegant dinner presentation.

  • 2 large boneless, skinless chicken breasts
  • 1 cup fresh spinach, chopped
  • 1/2 cup crumbled feta cheese
  • 2 slices cooked bacon, chopped
  • 1 clove garlic, minced
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • 1 tsp dried oregano
  • Fresh thyme, for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add garlic and spinach, sauté for 2–3 minutes until wilted. Remove from heat.
  3. In a bowl, combine the sautéed spinach, feta cheese, and chopped bacon.
  4. Butterfly the chicken breasts by slicing them horizontally without cutting all the way through. Open like a book and season with salt, pepper, and oregano.
  5. Stuff the chicken breasts with the spinach mixture and secure with toothpicks or kitchen twine.
  6. Heat an oven-safe skillet over medium heat and sear chicken for 2–3 minutes per side until golden.
  7. Transfer skillet to the oven and bake for 20–25 minutes, until chicken is cooked through.
  8. Rest for 5 minutes before slicing. Garnish with fresh thyme and serve warm.

  • Use a meat thermometer to ensure chicken reaches 165°F internally.
  • Substitute turkey bacon for a lighter option.
  • Pairs well with roasted vegetables or a light salad.
