- 2 large boneless, skinless chicken breasts
- 1 cup fresh spinach, chopped
- 1/2 cup crumbled feta cheese
- 2 slices cooked bacon, chopped
- 1 clove garlic, minced
- 1 tbsp olive oil
- Salt and pepper, to taste
- 1 tsp dried oregano
- Fresh thyme, for garnish
- Preheat oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Add garlic and spinach, sauté for 2–3 minutes until wilted. Remove from heat.
- In a bowl, combine the sautéed spinach, feta cheese, and chopped bacon.
- Butterfly the chicken breasts by slicing them horizontally without cutting all the way through. Open like a book and season with salt, pepper, and oregano.
- Stuff the chicken breasts with the spinach mixture and secure with toothpicks or kitchen twine.
- Heat an oven-safe skillet over medium heat and sear chicken for 2–3 minutes per side until golden.
- Transfer skillet to the oven and bake for 20–25 minutes, until chicken is cooked through.
- Rest for 5 minutes before slicing. Garnish with fresh thyme and serve warm.
