- 1 sheet puff pastry, thawed
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 small onion, finely chopped
- 4 cups fresh spinach, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon ground nutmeg
- 3/4 cup crumbled feta cheese
- 1/2 cup ricotta cheese
- 1 large egg
- 1 tablespoon milk (for egg wash)
- 2 tablespoons sesame seeds
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Heat olive oil in a skillet over medium heat. Add garlic and onion, sauté for 3–4 minutes until soft and fragrant.
- Add spinach, season with salt, pepper, and nutmeg. Cook until wilted. Remove from heat and let cool slightly.
- In a bowl, combine spinach mixture, feta, and ricotta. Mix well.
- Roll out puff pastry on a lightly floured surface. Spread the filling evenly, leaving 1 inch at the edge.
- Roll the pastry tightly into a log, seam-side down. Slice into 4–6 equal pieces.
- Place rolls on the prepared baking sheet. Whisk egg with milk and brush over each roll.
- Sprinkle sesame seeds generously on top.
- Bake for 25–30 minutes, or until golden and puffed. Serve warm or at room temperature.
