Ingredients

Scale
  • 1 lb shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1/2 tsp paprika
  • 1/2 tsp chili powder
  • 1/4 tsp garlic powder
  • Salt and black pepper to taste
  • 1/2 cup mayonnaise
  • 1 tbsp lime juice
  • 12 chipotle peppers in adobo (finely minced)
  • 1 tsp honey (optional)
  • 6 small flour or corn tortillas
  • 1 cup shredded red cabbage
  • 1/2 cup shredded green cabbage
  • 1/2 cup shredded carrots
  • 1 avocado, diced
  • 1 red chili, thinly sliced
  • 1 green onion, chopped
  • Fresh cilantro leaves
  • Lime wedges, for serving

Instructions

  1. In a bowl, toss shrimp with olive oil, paprika, chili powder, garlic powder, salt, and pepper.
  2. Heat a skillet over medium-high heat. Cook shrimp 2–3 minutes per side until opaque and slightly crispy. Set aside.
  3. In a small bowl, mix together all chipotle sauce ingredients until smooth. Adjust spice and sweetness to taste.
  4. Warm tortillas in a dry skillet or microwave until soft.
  5. Assemble tacos: layer with cabbage, carrots, shrimp, avocado, and sliced chili. Drizzle with chipotle sauce and top with cilantro and green onion.
  6. Serve with lime wedges and extra sauce on the side.

Notes

  • Use pre-shredded slaw mix to save time.
  • Adjust spice level by adding more or fewer chipotle peppers.
  • Grill the shrimp for extra smoky flavor.
