- 1 lb shrimp, peeled and deveined
- 1 tbsp olive oil
- 1/2 tsp paprika
- 1/2 tsp chili powder
- 1/4 tsp garlic powder
- Salt and black pepper to taste
- 1/2 cup mayonnaise
- 1 tbsp lime juice
- 1–2 chipotle peppers in adobo (finely minced)
- 1 tsp honey (optional)
- 6 small flour or corn tortillas
- 1 cup shredded red cabbage
- 1/2 cup shredded green cabbage
- 1/2 cup shredded carrots
- 1 avocado, diced
- 1 red chili, thinly sliced
- 1 green onion, chopped
- Fresh cilantro leaves
- Lime wedges, for serving
- In a bowl, toss shrimp with olive oil, paprika, chili powder, garlic powder, salt, and pepper.
- Heat a skillet over medium-high heat. Cook shrimp 2–3 minutes per side until opaque and slightly crispy. Set aside.
- In a small bowl, mix together all chipotle sauce ingredients until smooth. Adjust spice and sweetness to taste.
- Warm tortillas in a dry skillet or microwave until soft.
- Assemble tacos: layer with cabbage, carrots, shrimp, avocado, and sliced chili. Drizzle with chipotle sauce and top with cilantro and green onion.
- Serve with lime wedges and extra sauce on the side.

- Use pre-shredded slaw mix to save time.
