- 1 French baguette, sliced into 1/2-inch rounds
- 2 tablespoons olive oil (for crostini)
- 2 ripe avocados
- 1 tablespoon lime juice
- Salt and pepper to taste
- 1/4 teaspoon garlic powder
- 12 large shrimp, peeled and deveined
- 1 tablespoon olive oil (for shrimp)
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon chili flakes
- Fresh parsley, chopped (for garnish)
- Preheat oven to 375°F (190°C). Arrange baguette slices on a baking sheet, brush with olive oil, and toast for 8–10 minutes until golden and crisp.
- In a bowl, mash avocados with lime juice, garlic powder, salt, and pepper. Set aside.
- In a skillet over medium heat, add olive oil. Toss shrimp with paprika, chili flakes, salt, and pepper. Sear shrimp for 2–3 minutes per side until opaque and slightly crispy.
- Spread a layer of avocado mash onto each crostini. Top with one seared shrimp.
- Sprinkle with fresh parsley and additional chili flakes if desired. Serve immediately.
Notes
- Use day-old baguette for extra crunch after toasting.
- Avocado spread can be made a few hours ahead and kept with plastic wrap touching the surface to prevent browning.
- Adjust chili flakes based on desired spice level.
- For extra citrus flavor, add lime zest to the avocado mash.
