Ingredients

Scale

Cookie Dough

  • 1 roll refrigerated sugar cookie dough
  • Egg-shaped cookie cutter (tool)

Royal Icing & Decoration

  • 3 cups prepared royal icing
  • Pastel gel food coloring set (various colors: blue, pink, yellow, green)
  • 1 tablespoon cocoa powder
  • 1 tablespoon clear vanilla extract
  • Food-safe paintbrush
  • Parchment paper sheets (for baking)

Instructions

  1. Prepare Cookie Dough: Roll out the refrigerated sugar cookie dough on a lightly floured pastry mat to about ¼-inch thickness. Use an egg-shaped cookie cutter to cut out oval shapes.
  2. Bake Cookies: Arrange the cut-out cookies on a parchment paper-lined baking sheet. Bake according to the sugar cookie dough package directions until the edges are lightly golden. Remove from oven and allow cookies to cool completely on a wire rack.
  3. Color Royal Icing: Divide the prepared royal icing into separate small bowls. Tint each bowl with different pastel gel food coloring (such as pastel blue, pink, yellow, and green) until desired soft shades are achieved.
  4. Decorate Cookies: Using piping bags, flood the tops of each cooled cookie with the pastel-colored royal icing. Allow the icing to dry completely to a firm finish before proceeding.
  5. Create Speckled Effect: Mix 1 tablespoon cocoa powder with 1 tablespoon clear vanilla extract and a small splash of water to form a paintable mixture. Dip the food-safe brush into this mixture and flick or tap it to speckle dark brown spots over the dried royal icing, simulating realistic Easter egg speckles.
  6. Dry and Store: Let the speckled icing dry completely before serving or storing cookies in an airtight container to preserve freshness.

Notes

  • Use gel food coloring for vibrant pastel shades without thinning the royal icing.
  • Ensure cookies are fully cooled before icing to prevent melting the royal icing.
  • For best speckling results, adjust the cocoa-vanilla-water mixture consistency until it splatters well without clumping.
  • If you prefer, you can substitute homemade sugar cookie dough and royal icing for a fully homemade recipe.
  • These cookies keep well stored in an airtight container at room temperature for up to 5 days.
