This Slow Cooker Chicken Korma is a rich and creamy Indian-inspired dish made with tender chicken breasts simmered in a fragrant korma paste with coconut milk and ground almonds. Perfectly slow-cooked to develop deep flavors, it offers a mild yet aromatic experience ideal for a comforting meal served with rice and garnished with black onion seeds and flaked almonds.

Ingredients

Scale

Chicken Korma

  • 1 pound skinless boneless chicken breasts, diced (approx 3 breasts)
  • 1 onion, diced
  • 2 tablespoons ginger paste
  • 1 tablespoon garlic paste
  • 6 tablespoons korma paste
  • 1 cup coconut milk
  • 1 cup chicken stock
  • 4 tablespoons ground almonds (almond meal)

Garnish and Serving

  • Black onion seeds, to sprinkle
  • Flaked almonds, to sprinkle
  • Cooked rice, to serve

Instructions

  1. Prepare Ingredients: Dice the chicken breasts and onion. Have the ginger paste, garlic paste, korma paste, coconut milk, chicken stock, and ground almonds ready for use.
  2. Combine in Slow Cooker: Place the diced chicken, onion, ginger paste, garlic paste, korma paste, coconut milk, chicken stock, and ground almonds into the slow cooker. Stir thoroughly to ensure even mixing of all flavors and ingredients.
  3. Slow Cook: Cover the slow cooker with the lid and cook on low heat for 8 hours or on high heat for 4 hours. This slow cooking process will tenderize the chicken and meld the spices beautifully.
  4. Prepare to Serve: Once cooked, stir the korma gently. It can be served directly from the slow cooker either on its own or over cooked rice.
  5. Add Garnish and Serve: Before serving, sprinkle black onion seeds and flaked almonds on top for added texture and nutty flavor. Serve hot alongside rice for a complete meal.

Notes

  • For a richer texture, you may lightly toast the ground almonds before adding to the slow cooker.
  • Adjust the spiciness by moderating the amount of korma paste according to your taste preference.
  • If you prefer a thicker sauce, cook uncovered for the last 30 minutes to reduce excess liquid.
  • This recipe is excellent for meal prepping as flavors improve after resting overnight.
