Ingredients

Scale

Beef and Vegetables

  • 1 pound ground beef (recommended sirloin 93/7)
  • 1 cup matchstick carrots
  • 1 medium red bell pepper, sliced
  • 23 large scallions, roughly chopped

Broth and Seasonings

  • 3 cloves garlic, minced
  • 1/2 cup low sodium soy sauce
  • 2 tablespoons brown sugar
  • 14.25 ounces chicken stock or beef stock

Noodles and Garnish

  • 2 packs ramen noodles (dry)
  • Sesame seeds (optional, for garnish)
  • Additional scallions (optional, chopped for garnish)

Instructions

  1. Brown the Ground Beef: In a large skillet over medium-high heat, cook the ground beef until it is no longer pink. Drain any excess grease to prevent a greasy broth in the slow cooker.
  2. Combine Ingredients in Slow Cooker: Transfer the browned beef into the slow cooker basin. Add the matchstick carrots, sliced red bell pepper, and roughly chopped scallions.
  3. Prepare Broth Mixture: In a bowl, whisk together the minced garlic, low sodium soy sauce, brown sugar, and chicken or beef stock until the sugar dissolves and the mixture is well combined.
  4. Add Broth to Slow Cooker: Pour the broth mixture over the beef and vegetables in the slow cooker. Stir gently to evenly distribute all ingredients.
  5. Cook Slowly: Cover and cook on low heat for 4 to 6 hours, allowing the flavors to meld and the vegetables to soften thoroughly.
  6. Add Ramen Noodles: About 30 minutes before you plan to serve, add the dry ramen noodles directly into the slow cooker. Stir frequently to keep noodles submerged and ensure even cooking.
  7. Serve: Once the noodles are tender, ladle the beef ramen into bowls and garnish with additional chopped scallions and sesame seeds, if desired.

Notes

  • Use low sodium soy sauce to control the saltiness of the broth.
  • For a spicier version, add a pinch of red pepper flakes or a dash of sriracha when adding the broth.
  • If you prefer a richer broth, substitute beef stock for chicken stock.
  • To keep noodles from overcooking and becoming mushy, add them closer to the end of the slow cooking time.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
