Ingredients

Scale

Shrimp

  • 1 lb shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp salt

Mango Salsa

  • 1 large mango, diced
  • 1/2 cup tomatoes, chopped
  • 1/4 cup red onion, finely diced
  • 2 tbsp cilantro, chopped
  • 2 tbsp lime juice (divided)

Lime-Chili Sauce

  • 1/2 cup Greek yogurt or mayo
  • 1 tbsp chili sauce or sriracha

Other

  • 1 ripe avocado, sliced
  • 2 cups cooked rice

Instructions

  1. Marinate the shrimp: Toss the peeled and deveined shrimp with olive oil, garlic powder, paprika, and salt in a bowl. Let them marinate for 15 minutes to absorb the flavors.
  2. Prepare the mango salsa: In a separate bowl, combine the diced mango, chopped tomatoes, finely diced red onion, chopped cilantro, and 1 tablespoon of lime juice. Mix well and chill the salsa in the refrigerator while you prepare the other components.
  3. Grill the shrimp: Preheat a grill or grill pan to medium-high heat. Grill the marinated shrimp for 2 to 3 minutes on each side until they are cooked through and have a slight char for smoky flavor.
  4. Make the lime-chili sauce: In a small bowl, mix together Greek yogurt or mayonnaise with the remaining 1 tablespoon of lime juice and chili sauce or sriracha until the sauce is smooth. Adjust the spice level according to your taste preference.
  5. Assemble the bowls: In serving bowls, start with a layer of cooked rice. Arrange the grilled shrimp, sliced avocado, and chilled mango salsa on top. Drizzle with the lime-chili sauce and serve immediately for a fresh, colorful, and delicious meal.

Notes

  • You can substitute the shrimp grilling with pan-searing if you do not have a grill.
  • For a spicier kick, increase the amount of chili sauce or add fresh chopped chili.
  • Use brown rice or quinoa for a healthier grain option.
  • Make sure to use ripe mango and avocado for the best flavor and texture.
  • Leftover lime-chili sauce can be stored in an airtight container in the fridge for up to 2 days.
