Ingredients

Scale

Salmon & Vegetables

  • 1 lb raw salmon (skin on)
  • 2 small heads broccoli florets (or other vegetable of choice)
  • 2 tbsp extra virgin olive oil (EVOO) or avocado oil
  • 1 tsp garlic powder

Orange Ginger Sauce

  • 1/4 cup low sodium soy sauce
  • 1 orange, juiced
  • 1/2 orange, zested
  • 2 cloves garlic, minced
  • 1/2 tbsp fresh ginger, grated (or 1/2 tsp dried ginger)
  • 2 tbsp honey

Garnish

  • Reserved sauce (1/4 cup)
  • Sesame seeds
  • Diced green onions

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) and line a sheet pan with parchment paper or foil to make cleanup easier.
  2. Prepare Broccoli: Spread the broccoli florets on one end of the sheet pan. Toss them with the oil and garlic powder ensuring they are well coated.
  3. Prepare Salmon: Place the salmon fillet skin-side down on the opposite end of the sheet pan. Use a sharp knife to score the salmon into four equal portions, cutting through the flesh without breaking the skin.
  4. Make the Sauce: In a small bowl, whisk together the low sodium soy sauce, freshly squeezed orange juice, orange zest, minced garlic, grated ginger, and honey until well combined.
  5. Marinate Salmon: Reserve 1/4 cup of the sauce for later. Brush the remaining sauce generously over the raw salmon portions.
  6. Bake: Place the sheet pan in the preheated oven and roast for 18-20 minutes, or until the salmon is cooked through and flaky, and the broccoli is tender.
  7. Finish and Garnish: After baking, spoon the reserved sauce over the salmon. Sprinkle with sesame seeds and diced green onions before serving for added flavor and crunch.

Notes

  • You can substitute broccoli with other vegetables such as asparagus, green beans, or snap peas.
  • For a spicier kick, add red pepper flakes to the sauce.
  • Use fresh ginger for the best flavor, but dried ginger works in a pinch.
  • Make sure not to overcook the salmon; it should be moist and flaky.
  • Serve with steamed rice or quinoa to make it a complete meal.
