Instructions

  1. Preheat the oven: Set your oven to 350°F (175°C) and line a baking sheet with foil. Drizzle the foil with a little olive oil or use cooking spray to prevent sticking.
  2. Prepare mushrooms: Remove the stems from the button mushrooms and arrange the caps evenly on the prepared baking sheet.
  3. Sauté vegetables: Finely dice the red pepper, celery, onion, and three reserved mushrooms. In a pan, melt 1/2 tablespoon butter and sauté the diced celery, onion, and red pepper until they begin to soften.
  4. Add garlic and mushrooms: Near the end of sautéing, add the chopped mushrooms and minced garlic to the pan. Continue cooking until onions and celery turn translucent and tender, and mushrooms are fully cooked.
  5. Season the mixture: Stir in Old Bay seasoning, garlic powder, paprika, salt, and pepper. Mix thoroughly, then transfer the vegetable mixture to a mixing bowl.
  6. Combine stuffing ingredients: Add the crab meat, panko breadcrumbs, and gouda cheese to the vegetable mix. Stir until well combined.
  7. Stuff mushroom caps: Spoon the stuffing mixture into each mushroom cap generously, then top with a small amount of extra gouda cheese and a sprinkle of paprika for color and flavor.
  8. Bake: Place the baking sheet in the preheated oven and bake the stuffed mushrooms for 15 to 20 minutes, or until the mushrooms are tender and the stuffing is golden and bubbly.
