  • 1 whole bagel, halved and toasted
  • 1/2 avocado, mashed
  • 2 eggs, scrambled
  • 2 tablespoons shredded imitation crab (or real crab)
  • 1/4 teaspoon black pepper
  • 1 tablespoon butter (for eggs)
  • 1 tablespoon peanut butter
  • 1/2 banana, sliced
  • 2 strawberries, sliced
  • 56 blueberries
  • 1 teaspoon honey
  • Optional: fresh thyme leaves or mint

Instructions

  1. Toast the bagel halves until golden.
  2. Mash the avocado and spread it on one half of the bagel.
  3. In a skillet, melt butter and cook scrambled eggs until soft and fluffy.
  4. Add shredded crab and black pepper to the eggs and stir gently.
  5. Spoon the egg and crab mixture over the avocado half.
  6. Spread peanut butter on the other half of the bagel.
  7. Top with banana slices, strawberries, and blueberries.
  8. Drizzle with honey and garnish with fresh herbs if desired.
  9. Serve immediately with your favorite coffee or latte.
