Ingredients

Scale

Chicken

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • Salt, to taste
  • Freshly ground black pepper, to taste

Garlic Butter and Vegetables

  • 6 tablespoons unsalted butter, divided
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 2 medium zucchinis, sliced into half-moons
  • 1 cup fresh corn kernels
  • 1/4 cup fresh parsley, chopped
  • Juice of 1 lemon

Instructions

  1. Season Chicken: Generously season both sides of the chicken breasts with salt and freshly ground black pepper to enhance the flavor.
  2. Sear Chicken: Heat olive oil in a large skillet over medium heat. Add the chicken breasts and sear them for 6–7 minutes per side until they turn golden brown and are fully cooked through. Transfer the cooked chicken to a plate and set aside.
  3. Prepare Garlic Butter: Reduce the heat to medium-low. In the same skillet, add 4 tablespoons of butter. Once melted, add the minced garlic and sauté for about 1 minute until fragrant and aromatic.
  4. Cook Zucchini: Sprinkle in the Italian seasoning, then add the sliced zucchini. Cook for about 4 minutes, stirring occasionally, until the zucchini softens slightly but remains tender.
  5. Add Corn: Stir in the fresh corn kernels and cook for an additional 2 minutes until they are heated through and tender.
  6. Combine Chicken and Vegetables: Return the seared chicken breasts to the skillet. Gently spoon the garlic butter, zucchini, and corn mixture over the chicken, coating it evenly.
  7. Finish and Serve: Add the remaining 2 tablespoons of butter, chopped fresh parsley, and squeeze lemon juice over the entire dish. Stir gently to combine the flavors. Continue heating for 1–2 minutes until everything is warmed through. Adjust seasoning as needed and serve hot, garnished with extra parsley if desired.

Notes

  • You can substitute fresh corn with frozen corn if fresh is unavailable; just thaw before using.
  • For a spicier kick, add a pinch of red pepper flakes when sautéing the garlic.
  • Make sure not to overcook the zucchini to maintain a slight crunch and vibrant color.
  • Whole chicken breasts work best for this recipe, but you can slice them after cooking for easier serving.
  • Serve with a side of rice, mashed potatoes, or crusty bread to soak up the flavorful garlic butter sauce.
