Roasted Cauliflower Steaks with Herb Sauce

Thick cauliflower slices roasted until golden and tender, finished with a vibrant green herb sauce—an elegant plant-based main or hearty side dish full of flavor and texture.

  • 1 large head of cauliflower
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt and black pepper to taste
  • Pinch of red pepper flakes (optional)
  • 1/2 cup fresh parsley
  • 1/4 cup fresh cilantro
  • 1 small garlic clove
  • 2 tbsp lemon juice
  • 1/3 cup olive oil
  • Salt to taste

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Remove the outer leaves and trim the stem of the cauliflower, keeping the core intact. Slice into 3/4-inch thick “steaks.”
  3. Arrange steaks on the prepared baking sheet. Brush both sides with olive oil and season with garlic powder, smoked paprika, salt, pepper, and red pepper flakes if using.
  4. Roast for 20–25 minutes, flipping halfway, until golden and tender.
  5. Meanwhile, make the herb sauce: Blend parsley, cilantro, garlic, lemon juice, olive oil, and salt in a blender until smooth.
  6. Drizzle the herb sauce over the roasted cauliflower steaks before serving. Garnish with chopped herbs or radish slices if desired.

Notes

  • Choose a large, firm cauliflower to ensure good-sized steaks.
  • Leftover herb sauce can be used on grain bowls or roasted vegetables.
  • Serve over lentils or quinoa for a complete meal.
