Main Ingredients
- 1 cup Jasmine rice (or long grain rice, US dry measuring cup)
- 1 cup chicken broth
- 1 cup canned diced tomatoes with sauce
- 1/4 cup onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon butter
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon oregano
- 1/2 teaspoon kosher salt
- Rinse the rice: Rinse jasmine rice thoroughly in a mesh strainer, shaking well to remove excess water to ensure fluffy rice texture.
- Combine ingredients in rice cooker: Place the rinsed rice into the rice cooker pot. Add chicken broth, canned diced tomatoes with their sauce (do not drain), minced garlic, chopped onion, butter, chili powder, cumin, oregano, and kosher salt. Stir gently to mix all ingredients evenly.
- Cook the rice: Close the rice cooker lid and set the cooker to the ‘cook’ function or press the start button depending on your rice cooker model. Let the cooker complete its cooking cycle without opening the lid.
- Fluff and serve: Once the rice cooker indicates the cooking is done, open the lid and fluff the rice gently with a fork to separate the grains. Serve the rice warm as a side dish or part of your meal.
Notes
- Do not drain the canned diced tomatoes—use the entire contents for moisture and flavor.
- Use jasmine rice or long grain rice for best results since these rice types cook well in rice cookers.
- Adjust chili powder for desired spice level.
- Butter adds richness but can be substituted with oil for a lighter version.
- If you prefer vegetarian, substitute chicken broth with vegetable broth.
