Ingredients

Scale

Brownie Base

  • 200g dark chocolate
  • 175g unsalted butter
  • 265g light brown sugar
  • 200g all-purpose flour
  • 1/4 teaspoon salt
  • 3 large eggs

Caramel Topping

  • 300g white sugar
  • 200ml heavy cream
  • 100g unsalted butter
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 125g cornflakes

Instructions

  1. Prepare the Baking Tin and Melt the Chocolate: Grease and line an 8×8 inch square baking tin with parchment paper. Preheat your oven to 200°C (180°C fan)/Gas Mark 6. Finely chop the dark chocolate and place it in a large bowl. Melt the butter separately and pour it over the chopped chocolate, stirring continuously until smooth and fully melted.
  2. Mix the Brownie Batter: Add the light brown sugar to the melted chocolate and butter mixture and stir until combined. Incorporate the all-purpose flour and salt, mixing well. Finally, add the eggs and stir thoroughly until the batter is smooth and evenly blended.
  3. Bake the Brownies: Pour the batter into the prepared baking tin, spreading it evenly. Bake in the preheated oven for about 35 minutes. The brownies should remain gooey inside, so avoid relying solely on a knife test. If using a food thermometer, the internal temperature should be above 80°C. Allow the brownies to cool completely in the tin before proceeding.
  4. Make the Caramel: Place the white sugar in a heavy-bottomed saucepan over medium-high heat. Stir gently and occasionally to melt the sugar evenly until it reaches a golden-amber color. Remove the pan from heat and carefully add the heavy cream, butter, salt, and vanilla extract, stirring cautiously as the mixture will bubble up vigorously. Return the pan to the heat and cook the caramel until it reaches 118°C on a food thermometer, approximately 10 minutes.
  5. Combine Caramel with Cornflakes and Assemble: Remove the caramel from heat and stir in the cornflakes, making sure they are fully coated in the caramel mixture. Pour the caramel-coated cornflakes evenly over the cooled brownie base. Allow the entire dessert to cool completely and set before cutting into squares and serving.

Notes

  • Use a high-quality dark chocolate for the best flavor in the brownie base.
  • Ensure the caramel reaches the correct temperature (118°C) for a perfect chewy texture.
  • The brownies will be gooey inside when done; do not overbake.
  • Be very careful when adding cream to hot caramel as it will bubble aggressively.
  • Allow the dessert to cool fully before slicing to avoid breaking apart.
