- 1 tablespoon butter
- 2 medium yellow onions, thinly sliced
- 3 medium Yukon gold potatoes, peeled and thinly sliced
- 6 large eggs
- 1/4 cup milk or cream
- 1/2 cup crumbled goat cheese or feta (optional)
- 1 tablespoon fresh thyme leaves (plus more for garnish)
- Salt and pepper to taste
- Preheat oven to 375°F (190°C). In a large oven-safe skillet, heat olive oil and butter over medium heat.
- Add sliced onions and cook, stirring frequently, for 15–20 minutes until deeply caramelized. Remove half the onions and set aside for topping.
- Add sliced potatoes to the skillet with the remaining onions. Sauté for 5–7 minutes until just tender. Season with salt, pepper, and thyme.
- In a bowl, whisk together eggs, milk or cream, and optional cheese. Pour over the potatoes in the skillet, tilting the pan to distribute evenly.
- Arrange reserved onions on top. Transfer skillet to oven and bake for 15–20 minutes until eggs are set and the top is lightly golden.
- Let cool slightly before slicing. Garnish with fresh thyme leaves and serve warm or at room temperature.
