Potato and Caramelized Onion Frittata with Fresh Thyme

A golden, oven-baked frittata layered with tender sliced potatoes, sweet caramelized onions, and fresh thyme — this simple yet elegant dish is perfect for brunch, lunch, or a cozy dinner.

  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 2 medium yellow onions, thinly sliced
  • 3 medium Yukon gold potatoes, peeled and thinly sliced
  • 6 large eggs
  • 1/4 cup milk or cream
  • 1/2 cup crumbled goat cheese or feta (optional)
  • 1 tablespoon fresh thyme leaves (plus more for garnish)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). In a large oven-safe skillet, heat olive oil and butter over medium heat.
  2. Add sliced onions and cook, stirring frequently, for 15–20 minutes until deeply caramelized. Remove half the onions and set aside for topping.
  3. Add sliced potatoes to the skillet with the remaining onions. Sauté for 5–7 minutes until just tender. Season with salt, pepper, and thyme.
  4. In a bowl, whisk together eggs, milk or cream, and optional cheese. Pour over the potatoes in the skillet, tilting the pan to distribute evenly.
  5. Arrange reserved onions on top. Transfer skillet to oven and bake for 15–20 minutes until eggs are set and the top is lightly golden.
  6. Let cool slightly before slicing. Garnish with fresh thyme leaves and serve warm or at room temperature.
