Base
- 1/4 cup unsalted butter
- 1 (10 oz) bag mini marshmallows (about 5 cups)
- 1/2 cup peanut butter
- 6 cups Rice Krispie cereal
Chocolate Topping
- 8 oz chocolate chips (about 1 1/3 cups)
- 2 teaspoons vegetable oil
- Prepare the pan: Lightly grease a 9×13 inch pan with butter or non-stick cooking spray to prevent sticking.
- Melt the base ingredients: In a large saucepan over low heat, gently melt the butter, mini marshmallows, and peanut butter while stirring continuously to combine smoothly without burning.
- Add the cereal: Once the mixture is melted and uniform, remove from heat and stir in the Rice Krispie cereal until evenly coated.
- Press mixture into pan: Transfer the sticky mixture to the prepared pan. Lightly spray your hands with non-stick cooking spray and press the mixture firmly and evenly into the pan’s bottom.
- Prepare chocolate topping: Place chocolate chips in a medium heatproof bowl and microwave on medium power for 45-second intervals, stirring between each until almost melted. Stir until smooth.
- Add oil to chocolate: Stir in the vegetable oil to the melted chocolate to create a glossy finish.
- Top the bars: Pour the chocolate evenly over the pressed cereal mixture and spread gently if needed.
- Set and cut: Allow the bars to harden at room temperature for about 2 hours. Once set, cut into 18 squares and store in an airtight container at room temperature.
Notes
- Lightly greasing your hands with non-stick spray helps prevent the sticky mixture from clinging while pressing it into the pan.
- Use medium power when microwaving chocolate to avoid burning or seizing.
- You can substitute peanut butter with other nut butters if desired.
- Store in an airtight container to maintain freshness for up to a week.
