Peanut Butter Cheesecake Brownie Bars

A decadent triple-layer treat with a rich fudgy brownie base, velvety peanut butter cheesecake center, and a beautifully swirled chocolate topping—these bars are a perfect blend of indulgence and balance in every bite.

  • ½ cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ⅓ cup unsweetened cocoa powder
  • ½ cup all-purpose flour
  • ¼ teaspoon salt
  • 8 oz cream cheese, softened
  • ⅓ cup creamy peanut butter
  • ⅓ cup granulated sugar
  • 1 egg
  • ½ teaspoon vanilla extract
  • ¼ cup chocolate chips, melted
  • 1 tablespoon peanut butter

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, whisk together melted butter, sugar, eggs, and vanilla. Stir in cocoa powder, flour, and salt until just combined. Spread into the prepared pan.
  3. In another bowl, beat cream cheese, peanut butter, sugar, egg, and vanilla until smooth. Gently layer over brownie batter.
  4. Melt chocolate chips with peanut butter and drizzle over the top. Use a knife to swirl decoratively.
  5. Bake for 30–35 minutes, or until the center is set and edges are lightly golden.
  6. Cool completely before slicing. Chill for at least 1 hour for clean cuts and best texture.
