Ingredients

Scale

Peach Filling

  • 2 cups chopped peaches (fresh, frozen, or canned)
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons salted butter (or unsalted with a pinch of salt)
  • ½ cup light brown sugar
  • 4 tsp cornstarch
  • ½ teaspoon ground cinnamon
  • ½ teaspoon pure vanilla extract

Egg Rolls

  • 10 egg roll wrappers
  • 2 tablespoons water (for brushing)
  • Vegetable oil (for frying)

Vanilla Bean Dipping Sauce

  • ¾ cup powdered sugar
  • ½ teaspoon vanilla bean paste (or vanilla extract)
  • 23 tablespoons milk
  • Pinch of salt

For Dusting (Optional)

  • Powdered sugar

Instructions

  1. Prepare Peach Filling: In a small saucepan, combine the chopped peaches, fresh lemon juice, butter, light brown sugar, cornstarch, and ground cinnamon. Stir these ingredients together to begin warming.
  2. Simmer Mixture: Bring the mixture to a boil while stirring continuously. Once boiling, reduce the heat to low and let it simmer. Continue to stir occasionally for about 10 minutes until the filling thickens. Remove from heat and stir in the pure vanilla extract, then set aside to cool completely.
  3. Assemble Egg Rolls: Lay one egg roll wrapper on a clean flat surface with one corner pointing toward you (diamond shape). Lightly brush the edges with water to help seal. Place approximately 2 tablespoons of the cooled peach filling in the center of the wrapper.
  4. Roll and Seal: Fold the sides of the wrapper inward over the filling, then roll tightly from the corner nearest to you toward the opposite corner. Press the edges to seal the egg roll securely. Repeat this process with the remaining wrappers and filling.
  5. Heat Oil for Frying: Preheat vegetable oil in a deep fryer or heavy pot to 350°F (175°C). Make sure the oil is hot enough to ensure crisp frying without excessive oil absorption.
  6. Fry Egg Rolls: Carefully add the assembled egg rolls into the hot oil in batches to avoid overcrowding. Fry each batch for about 5-6 minutes or until they develop a deep golden brown color and a crisp exterior.
  7. Drain and Cool: Using a slotted spoon or tongs, remove the fried egg rolls from oil and place them on a wire rack set over paper towels to drain excess oil. Allow them to cool slightly before serving.
  8. Prepare Vanilla Bean Dipping Sauce: In a small bowl, whisk together the powdered sugar, milk, and vanilla bean paste until smooth. Add a pinch of salt to balance the sweetness and adjust consistency with additional milk if needed.
  9. Serve: Dust the cooled egg rolls with optional powdered sugar for extra sweetness and serve them warm alongside the vanilla bean dipping sauce for dipping.

Notes

  • Use fresh peaches when in season for the best flavor, but frozen or canned peaches work well too.
  • Ensure the peach filling is fully cooled before assembling the egg rolls to prevent sogginess.
  • Maintain oil temperature at 350°F to ensure crispy egg rolls without being greasy.
  • Egg roll wrappers can be found in the refrigerated section of most grocery stores.
  • Vanilla bean paste offers a richer flavor compared to vanilla extract but both are suitable.
