Peach Chickpea Salad with Feta and Mint

A refreshing and colorful summer salad made with juicy peaches, hearty chickpeas, sweet cherry tomatoes, red onion, tangy feta, and fresh mint—perfect for a light lunch or picnic dish.

Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 ripe peaches, thinly sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 1/3 cup crumbled feta cheese
  • 2 tbsp fresh mint leaves, torn
  • 2 tbsp chopped fresh parsley
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp honey or maple syrup
  • 1/2 tsp Dijon mustard
  • Salt and black pepper to taste

Instructions

  1. In a large bowl, combine chickpeas, peaches, cherry tomatoes, red onion, feta, mint, and parsley.
  2. In a small jar or bowl, whisk together olive oil, lemon juice, honey, Dijon mustard, salt, and pepper until emulsified.
  3. Pour the dressing over the salad and gently toss to combine.
  4. Chill for 15 minutes to let flavors meld, or serve immediately.

Notes

  • Use firm, ripe peaches for best texture.
  • Can substitute nectarines or plums if peaches are unavailable.
  • Great as a side dish for grilled meats or served on its own with crusty bread.
