Pan-Seared Cod with Garlic Butter Spinach

Flaky, golden-browned cod fillets served over sautéed garlic spinach and finished with a velvety garlic butter sauce—an elegant, flavorful dish perfect for a quick yet refined meal.

  • 2 cod fillets (6 oz each)
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 tablespoon butter (for spinach)
  • 2 garlic cloves, minced (for spinach)
  • 4 cups fresh baby spinach
  • Salt and pepper to taste (for spinach)
  • 3 tablespoons unsalted butter (for sauce)
  • 1 garlic clove, minced (for sauce)
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh parsley
  • Salt and black pepper to taste (for sauce)

Instructions

  1. Pat the cod fillets dry with paper towels. Season both sides with salt and pepper.
  2. Heat olive oil and 1 tablespoon butter in a skillet over medium-high heat. Sear cod fillets for 3–4 minutes per side until golden brown and cooked through. Remove and set aside.
  3. In the same pan, add 1 tablespoon butter and sauté minced garlic for about 30 seconds.
  4. Add spinach and cook until just wilted, about 2 minutes. Season with salt and pepper. Remove from heat.
  5. For the sauce, melt 3 tablespoons butter in a small saucepan over low heat. Add garlic and cook for 1 minute.
  6. Stir in lemon juice, chopped parsley, salt, and black pepper. Mix well and remove from heat.
  7. To serve, plate the garlic butter spinach, top with the seared cod, and drizzle with the garlic butter sauce. Serve immediately with a wedge of lemon if desired.

Notes

  • Ensure cod is well dried before searing for a better crust.
  • You can substitute cod with halibut or haddock.
  • Use clarified butter for a richer sauce and higher smoke point.
