- 2 cod fillets (6 oz each)
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 tablespoon butter (for spinach)
- 2 garlic cloves, minced (for spinach)
- 4 cups fresh baby spinach
- Salt and pepper to taste (for spinach)
- 3 tablespoons unsalted butter (for sauce)
- 1 garlic clove, minced (for sauce)
- 1 tablespoon lemon juice
- 1 tablespoon chopped fresh parsley
- Salt and black pepper to taste (for sauce)
- Pat the cod fillets dry with paper towels. Season both sides with salt and pepper.
- Heat olive oil and 1 tablespoon butter in a skillet over medium-high heat. Sear cod fillets for 3–4 minutes per side until golden brown and cooked through. Remove and set aside.
- In the same pan, add 1 tablespoon butter and sauté minced garlic for about 30 seconds.
- Add spinach and cook until just wilted, about 2 minutes. Season with salt and pepper. Remove from heat.
- For the sauce, melt 3 tablespoons butter in a small saucepan over low heat. Add garlic and cook for 1 minute.
- Stir in lemon juice, chopped parsley, salt, and black pepper. Mix well and remove from heat.
- To serve, plate the garlic butter spinach, top with the seared cod, and drizzle with the garlic butter sauce. Serve immediately with a wedge of lemon if desired.
Notes
- Ensure cod is well dried before searing for a better crust.
- You can substitute cod with halibut or haddock.
- Use clarified butter for a richer sauce and higher smoke point.
