Dough Ingredients
- 2 cups warm water
- 4 1/2 teaspoons quick rise yeast (2 packets)
- 6 tablespoons granulated sugar
- 6 cups all purpose flour (approximately, can vary by 1 cup)
- 5 tablespoons butter (melted and cooled)
- 2 teaspoons salt
Filling Ingredients
- 1/2 cup butter (melted)
- 1 cup granulated sugar
- 2 tablespoons orange zest
- 1/4 teaspoon cinnamon
Orange Cream Cheese Icing Ingredients
- 2 oz cream cheese
- 1/4 cup softened butter
- 1 teaspoon orange juice
- 1 tablespoon orange zest
- 1 teaspoon vanilla extract
- 1 teaspoon corn syrup
- 1 1/4 cups powdered sugar
- Make the dough – In the bowl of a stand mixer, combine warm water with yeast and 3 tablespoons sugar. Stir until mostly dissolved. Let it sit for 10 minutes until the mixture becomes foamy. If no foam appears, use fresh yeast and try again.
- Mix dough base – Add remaining 3 tablespoons sugar and 2 cups of flour to the yeast mixture. Mix on low to medium speed with the dough hook attachment.
- Add butter and salt – Stir in melted cooled butter and salt. Gradually add 1-2 more cups of flour and knead with the mixer for about 2 minutes on low to medium speed.
- Knead dough – Add the remaining flour a bit at a time, kneading after each addition, until the dough is smooth, pulls away from the bowl sides, still slightly tacky but not sticky to the touch. Kneading should take about 10 minutes total.
- First rise – Transfer dough to a well-greased large bowl, rolling it around to coat with oil. Cover and let it rise on the counter for 2-3 hours, or refrigerate for 2-3 hours up to overnight.
- Prepare filling – In a medium bowl, combine sugar, orange zest, and cinnamon. Set aside.
- Roll the dough – Flour a clean surface, dump the risen dough, flour dough and rolling pin, and roll out to approximately a 24″ x 18″ rectangle. Move dough as needed to prevent sticking, adding flour as necessary.
- Apply filling – Spread the softened butter evenly over the dough, leaving a 1-inch border along one longer edge. Sprinkle the orange sugar mixture evenly over the butter.
- Form rolls – Roll the dough tightly into a log starting from the buttered side towards the border without sugar. Place the seam side down.
- Cut rolls – Using a serrated bread knife, slice the log into 1 1/2″ rolls. Place rolls on a buttered parchment-lined half sheet pan. You should get about 16 rolls plus 2 small end pieces.
- Second rise – Cover the rolls with plastic wrap and let rise for 1 hour or until puffed and slightly risen.
- Preheat oven – When the rise is almost complete, preheat the oven to 350°F (175°C).
- Bake rolls – Bake rolls for 20-25 minutes until the tops are golden brown.
- Make orange cream cheese icing – In a small bowl, combine cream cheese, softened butter, orange juice, orange zest, vanilla extract, corn syrup, and powdered sugar. Mix slowly until combined, then whip until smooth and light.
- Ice the rolls – Spread the icing over the warm rolls. Serve warm or at room temperature for best enjoyment.
Notes
- Flour quantity can vary depending on humidity and flour type; add flour gradually until the dough reaches the right texture: smooth, tacky but not sticky.
- You can refrigerate the dough for the first rise for up to overnight to develop flavor and make the process more flexible.
- End pieces of dough rolls can be squeezed onto the baking sheet or baked separately as mini rolls.
- Ensure yeast is fresh for proper rise—discard if mixture fails to foam.
- Use a serrated knife for cleaner cuts of the dough rolls to maintain shape.
